Ben Liebmann - COO, restaurant noma - Copenhagen
Ben Liebmann, COO, restaurant noma is my guest on the Nordic Future Makers podcast this week. noma is the four-time winner of the S. Pellegrino World’s Best Restaurant, founded by trailblazing and critically-acclaimed head chef René Redzepi. Opened in 2003 and based within a Bjarke Ingels designed urban farm located in the Copenhagen neighbourhood of Christiania (the self-proclaimed free-town of the city), the multiple Michelin starred restaurant is recognised globally for its reinvention and interpretation of Nordic Cuisine.
In this podcast Ben talks of his career journey that has taken him across the world from music to telecoms to TV to noma. He talks eloquently about developing brands and multi-channel businesses and balancing creativity and commerciality, referencing his experiences with Idol and Masterchef, before going into more detail around his current role and the business of restaurant noma. .
At the end of this podcast we talk about the effects of covid-19 and plans for the future. When this episode was recorded (early May 2020) it was unclear what was going to happen, but it has since been announced that restrictions in Denmark will be relaxed slightly and on 21st May 2020 restaurant noma will re-open, initially as an outdoor wine bar with two types of burgers available (more information is available on the noma website - https://noma.dk/.)
It was fascinating to hear Ben talk and I hope it gives listeners inspiration and ideas for the future!
