For this cook-along recipe you will need (serves 4):


300g sushi rice

2 aubergines 

2 tbsp vegetable oil

3 tbsp white miso

2 tbsp mirin

1 tablespoon caster sugar

1 tablespoon sake

A thumb-sized piece of ginger

1 tsp toasted sesame seeds

2 spring onions

1 lime 

A few sprigs of mint
