Matsudai rocketed to nationwide fame through their incredible ramen DIY kits, and they're currently in the middle of their second London pop-up. We talk about James' path into ramen from the music industry and how he was almost put off ramen forever by Wagamama. He also described how he cobbled together his original recipes from blurry whiteboards in the background of YouTube videos from <a href=\"http://www.rajuku.com/\" rel=\"noopener noreferrer\" target=\"_blank\">Rajuku ramen school</a>, and how always serving tonkotsu is like Radiohead always playing 'Creep'. We caught up when James was - in his own words - \"a little nervous guy from Wales coming to the big city to become a YouTube star with Uncle Roger\".</p><p><br></p><p>James gives shout outs to <a href=\"https://www.instagram.com/supa_ya_ramen/\" rel=\"noopener noreferrer\" target=\"_blank\">Supa Ya ramen</a>, <a href=\"https://www.instagram.com/kanada_ya_ldn/\" rel=\"noopener noreferrer\" target=\"_blank\">Kanada-Ya</a>, <a href=\"https://www.instagram.com/laksamania/\" rel=\"noopener noreferrer\" target=\"_blank\">Laksamania</a> and <a href=\"https://www.instagram.com/nanbanlondon/\" rel=\"noopener noreferrer\" target=\"_blank\">Nanban</a> (<a href=\"https://www.instagram.com/cheftimanderson/\" rel=\"noopener noreferrer\" target=\"_blank\">Tim Anderson</a>) in London.</p><p>He also recommends <a href=\"https://www.instagram.com/brotherthaiuk/\" rel=\"noopener noreferrer\" target=\"_blank\">Brother Thai</a>, <a href=\"https://www.instagram.com/milkwoodcdf/\" rel=\"noopener noreferrer\" target=\"_blank\">Milkwood</a>, <a href=\"https://www.instagram.com/fowlandfury/\" rel=\"noopener noreferrer\" target=\"_blank\">Fowl and Fury</a> and <a href=\"https://www.instagram.com/renjapanesefood/\" rel=\"noopener noreferrer\" target=\"_blank\">Ren Japanese Food</a> around his parts in Cardiff.</p><p><br></p><p><a href=\"https://www.instagram.com/matsudairamen/\" rel=\"noopener noreferrer\" target=\"_blank\">@matsudairamen</a> on Instagram.</p><p>You can find me at <a href=\"https://www.instagram.com/mikeeatslondon/\" rel=\"noopener noreferrer\" target=\"_blank\">@mikeeatslondon</a> on Instagram and the pod at <a href=\"https://www.instagram.com/mikemeetslondon/\" rel=\"noopener noreferrer\" target=\"_blank\">@mikemeetslondon</a>.
