In this new episode, we meet Thomas Graham, former student of the Diplôme de Cuisine. This young Anglo-American is today the chef of neo-bistro Le Mermoz, in the 8th arrondissement of Paris, he shares his journey and his daily life during his time at Le Cordon Bleu Paris.

He talks about what is involved in taking over an establishment which embodies tradition and innovation, and reminisces about his early days at Le Cordon Bleu Paris institute.
